Paysan Cabernet Sauvignon, 2021, ABV 13.2%, 750ml

Another icon of California: the 2021 Cabernet Sauvignon which is perfect for winter. 

Med-full bodied wine and low alcohol, allows nuances of dark black fruit, purple violets, and a slight hint of dried herbs to explode in the nose and on the palate. The combination of well-drained, alluvial soils, old vines, daytime heat, and night time cool, creates fruit that is uncommonly structured and ripe, yet fresh and mineral driven. Old wines produce less fruit but each grape has more complexity. 

Ian Brand is the producer here and he drives around, finding outstanding grapes and makes outstanding wine.... outstanding!
